- 2 about 7oz/220g each boneless, skinless chicken breasts
- 2 oz (60g) cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup finely grated parmesan cheese
- 2 jalapeños, deseeded and finely diced
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp kosher salt (for filling)
- 1/2 tsp smoked paprika (or regular)
- 1/4 tsp kosher salt (for chicken)
- 1 tbsp olive oil
Preheat oven to 350°F. Mix all filling ingredients. Cut a deep pocket into the side of each chicken breast.
Divide filling between chicken pockets. Seal openings with 2-3 toothpicks. Sprinkle outside with paprika and salt.
Heat oil in oven-proof skillet. Sear chicken 2-3 mins per side until golden brown.
Transfer skillet to oven. Bake 15-18 mins until internal temp reaches 165°F. Rest 5 mins before slicing.
Pro Tips: For the easiest stuffing, soften the cream cheese in the microwave for 20-30 seconds before mixing. To control the spice level, remove all the seeds and white ribs from the jalapeños for mild, or leave some in for heat.
