- 2 part-baked sandwich baguettes
- 2 160g (5.6 oz) cans tuna, drained
- 3 tablespoons basil pesto
- 1 tablespoon mayonnaise
- 150 g (about 1 ½ cups) mature cheddar cheese, grated
Preheat oven to 200°C (400°F). In a bowl, mix drained tuna, pesto, and mayo until combined.
Place baguettes on a baking tray. Slice lengthways down the middle to create a deep pocket, without cutting all the way through.
Divide tuna mix between baguettes, stuffing into the pocket. Pile grated cheese generously on top.
Bake for 10-12 mins until bread is crisp, filling is hot, and cheese is melted and bubbling. Serve immediately.
Pro Tips: When slicing the baguettes, cut a deep pocket without going all the way through to create a sturdy vessel for the filling.
