Ingredients

  • 2 part-baked sandwich baguettes
  • 2 160g (5.6 oz) cans tuna, drained
  • 3 tablespoons basil pesto
  • 1 tablespoon mayonnaise
  • 150 g (about 1 ½ cups) mature cheddar cheese, grated

Instructions

  • Preheat oven to 200°C (400°F). In a bowl, mix drained tuna, pesto, and mayo until combined.
  • Place baguettes on a baking tray. Slice lengthways down the middle to create a deep pocket, without cutting all the way through.
  • Divide tuna mix between baguettes, stuffing into the pocket. Pile grated cheese generously on top.
  • Bake for 10-12 mins until bread is crisp, filling is hot, and cheese is melted and bubbling. Serve immediately.

Notes

Pro Tips: When slicing the baguettes, cut a deep pocket without going all the way through to create a sturdy vessel for the filling.
