Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup fresh pineapple chunks
  • 1/2 cup teriyaki sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 2 cloves garlic, minced
  • 1 tbsp toasted sesame seeds
  • 2 tbsp green onions, sliced
  • 12 wooden or metal skewers

Instructions

  • Prep the Marinade: In a bowl, combine teriyaki sauce, honey, sesame oil, soy sauce, rice vinegar, grated ginger, and minced garlic. Mix well.
  • Marinate the Chicken: Place chicken pieces in a resealable plastic bag or bowl. Pour half of the marinade over the chicken, reserving the other half for glazing. Marinate for at least 20 minutes in the refrigerator.
  • Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread marinated chicken and pineapple chunks alternately onto the skewers.
  • Grill the Skewers: Preheat the grill or grill pan to medium-high heat. Grill the skewers for 6-8 minutes on each side, brushing with the reserved marinade occasionally, until the chicken is cooked through and slightly charred.
  • Garnish and Serve: Sprinkle the skewers with toasted sesame seeds and sliced green onions. Serve hot with extra teriyaki glaze if desired.

Notes

Pro Tips: Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Marinate the chicken for at least 20 minutes for maximum flavor. Use fresh pineapple for the best taste. Grill over medium-high heat to achieve a nice char without drying out the chicken.Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave until warmed through.Variations: Swap chicken for shrimp or tofu for a different protein option. Add bell peppers or onions to the skewers for extra veggies. Use a spicy teriyaki sauce for a kick of heat.
