Ingredients

  • 1 lb boneless chicken breast, cut into bite-sized strips
  • 0.5 cup sweet chili sauce
  • 4 large flour tortillas
  • Fresh lettuce leaves
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 3 green onions, finely chopped
  • 0.25 cup mayonnaise
  • 1 tbsp sesame seeds (optional)
  • Fresh cilantro (optional)

Instructions

  • Cut chicken into bite-sized strips and season with salt and pepper.
  • Heat oil in a large skillet over medium-high heat. Cook chicken until golden brown and cooked through (165°F), about 5-7 minutes.
  • Add sweet chili sauce to the skillet and toss to coat chicken. Cook for 2-3 minutes until sauce thickens and caramelizes. Remove from heat and let cool slightly.
  • Warm tortillas in the microwave for 15 seconds. Spread a thin layer of mayonnaise over each tortilla.
  • Layer lettuce, glazed chicken, shredded carrots, bell pepper, and green onions in the center of each tortilla. Sprinkle with cilantro and sesame seeds if desired.
  • Fold bottom up, then fold in sides, and roll tightly to secure. Cut in half diagonally and serve immediately.

Notes

Pro Tips: Let the chicken cool slightly before assembling to prevent soggy wraps. Cook off excess sauce so it becomes a sticky glaze, not a runny liquid. Warm the tortillas for 15 seconds to make them pliable. Spread a thin layer of mayonnaise on the entire tortilla to act as a moisture barrier. For meal prep, cook the chicken and prep veggies separately, then assemble fresh.
