Ingredients

  • 3 cups Granny Smith apples, diced
  • 1 cup white sugar
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon (for filling)
  • 0.5 cup dark brown sugar
  • 0.5 cup unsalted butter, room temperature
  • 1 cup Greek yogurt
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp kosher salt
  • 2 large eggs, room temperature
  • 1 tsp ground cinnamon (for sugar layer)
  • 0.25 cup white sugar (for sugar layer)
  • 1 cup powdered sugar
  • 2 to 4 tbsp milk
  • 1 tsp vanilla extract

Instructions

  • In a saucepan, combine diced apples, white sugar, cornstarch, 1 tsp cinnamon, and a splash of water. Cook over medium heat for 5-7 minutes until apples are soft and mixture thickens. Let cool.
  • In a small bowl, mix 1 tsp cinnamon and ¼ cup white sugar for the sugar layer. Set aside.
  • Preheat oven to 350°F. Grease a 9x13-inch baking pan.
  • In a large bowl, cream butter and brown sugar until light and fluffy. Add Greek yogurt, vanilla, and eggs; mix until smooth.
  • In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to wet mixture, mixing just until combined.
  • Pour half the batter into the pan. Spread with apple filling, then sprinkle with half the cinnamon sugar. Top with remaining batter and sprinkle with remaining cinnamon sugar.
  • Bake for 35-40 minutes, until a toothpick comes out clean. Cool slightly in the pan.
  • Poke holes in warm cake. Whisk powdered sugar, 2 tbsp milk, and vanilla until smooth. Add more milk to reach desired consistency. Pour glaze over cake. Cool slightly before serving.

Pro Tips: Use room temperature ingredients for the best texture. Do not overmix the batter. Poke holes in the warm cake before glazing to let the sweetness seep in. If the cake browns too quickly, tent with foil. For a nutty crunch, add ½ cup chopped walnuts or pecans to the apple filling. This cake can be made ahead and freezes beautifully without the glaze.
