Ingredients

  • 4 cups Rice Chex cereal
  • 1 cup green candy melts
  • 0.25 cup creamy peanut butter
  • 0.5 tbsp vegetable or coconut oil
  • 0.75 cup powdered sugar (or up to 1 cup)
  • 0.25 cup green M&Ms
  • 0.25 cup shamrock sprinkles
  • 0.25 cup Lucky Charms shamrock marshmallows

Instructions

  • In a large microwave-safe bowl, combine green candy melts, peanut butter, and oil. Microwave on HIGH for 30 seconds, stir, then continue in 15-second bursts until completely smooth.
  • Immediately pour the Rice Chex cereal into the melted mixture. Gently fold with a spatula until every piece is evenly coated.
  • Transfer the coated cereal to a gallon-sized zip-top bag. Add the powdered sugar, seal the bag, and shake vigorously until every piece is coated in sugar.
  • Pour the sugar-coated cereal onto a baking sheet lined with parchment paper. Spread out and let set for 5-10 minutes.
  • Transfer the set cereal to a large bowl. Gently stir in the green M&Ms, shamrock sprinkles, and Lucky Charms marshmallows.
  • Serve immediately, or store in an airtight container at room temperature.

Pro Tips: For the most even powdered sugar coating, shake the coated cereal in a sealed gallon-sized zip-top bag—it's fun and effective! To prevent clumpy candy, melt in short microwave bursts, stirring well between each.
