Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup graham cracker crumbs
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • Extra chocolate chips and mini marshmallows, for topping

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan or line with parchment paper.
  • In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet mixture, mixing until just combined. Do not overmix.
  • Gently fold in graham cracker crumbs and 1 cup chocolate chips until evenly distributed.
  • Spread half the dough evenly in the prepared pan. Sprinkle with 1 cup mini marshmallows. Drop remaining dough in pieces over marshmallows and gently spread. Top with extra chocolate chips and marshmallows.
  • Bake for 25-30 minutes until golden brown. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Pro Tips: For perfectly gooey marshmallows, sprinkle extra marshmallows on top during the last 5 minutes of baking. Line your pan with parchment paper for easy removal. Do not overmix the dough. Let the bars cool completely in the pan before slicing for the cleanest cuts. These bars are endlessly customizable – try dark chocolate, peanuts, or a peanut butter swirl!
