Equipment

  • 4-6 Quart Slow Cooker Essential for set-it-and-forget-it cooking.

Ingredients

  • 1 jar (12 oz) apricot preserves
  • 1.5 cups barbecue sauce
  • 32 oz frozen fully-cooked beef meatballs
  • 1 package (14 oz) beef little smokies, drained
  • 20 oz pineapple chunks, drained

Instructions

  • In a 4-6 quart slow cooker, stir together the apricot preserves and barbecue sauce until well combined.
  • Add the frozen meatballs and drained little smokies to the slow cooker. Stir gently to coat evenly with the sauce.
  • Cover and cook on HIGH for 2 to 3 hours, until the meatballs are heated through and the sauce is bubbling. Stir once halfway if possible.
  • Stir in the well-drained pineapple chunks. Cover and continue cooking on HIGH for an additional 20-30 minutes.
  • Switch slow cooker to the WARM setting. Serve directly from the pot with toothpicks.

Notes

Pro Tips: For the best texture, add the drained pineapple chunks during the last 20-30 minutes of cooking. Adding it too early can make the sauce watery. Use a good-quality, sweet barbecue sauce as the base of your glaze for the best flavor. This dish can be kept on the WARM setting in your slow cooker for up to 4 hours for easy serving.
