Ingredients

  • 2-3 lbs boneless, skinless chicken thighs (or breasts)
  • 1/3 cup honey
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup ketchup
  • 4-5 cloves garlic, minced
  • 1 tsp minced ginger (optional)
  • 1 tbsp cornstarch
  • 2 tbsp cold water

Instructions

  • Place chicken thighs in the bottom of the slow cooker.
  • In a bowl, whisk together honey, soy sauce, ketchup, minced garlic, and ginger. Pour over the chicken.
  • Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours, until chicken is tender and shreds easily.
  • Remove chicken. Pour sauce into a saucepan. Mix cornstarch and water into a slurry, whisk into sauce, and simmer for 2-3 mins until thickened.
  • Return chicken to slow cooker, pour thickened glaze over top, and toss to coat. Garnish with sesame seeds and green onions.
