  • 8 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup dill pickles, sliced
  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp pickle juice
  • 1 tbsp vegetable oil
  • 1 tbsp butter

Instructions

  • Prep the Beef: In a bowl, combine the ground beef, salt, black pepper, garlic powder, onion powder, and smoked paprika. Mix gently with your hands until just combined. Divide the mixture into 8 equal portions and roll each into a ball.
  • Make the Sauce: In a small bowl, whisk together the mayonnaise, ketchup, yellow mustard, and pickle juice. Set aside.
  • Cook the Beef: Heat a large cast-iron skillet or griddle over medium-high heat. Add the vegetable oil and butter. Once hot, place one beef ball in the skillet and press down firmly with a spatula to flatten into a thin patty. Repeat with 3 more balls, leaving space between each patty. Cook for 2-3 minutes until the edges are crispy and browned. Flip and cook for another 1-2 minutes. Remove from the skillet and repeat with the remaining beef balls.
  • Warm the Tortillas: In the same skillet, reduce the heat to medium and warm the tortillas for 30 seconds per side until soft and slightly charred.
  • Assemble the Tacos: Spread a spoonful of the smash burger sauce on each tortilla. Place a beef patty on top, then sprinkle with shredded cheddar cheese. Add shredded lettuce, diced tomato, sliced red onion, and pickles. Fold the tortilla in half and serve immediately.
