Ingredients

  • 4 tbsp unsalted butter
  • 1 package (10 oz) marshmallows
  • 0.5 tsp vanilla extract
  • 2 to 3 drops green food coloring (gel preferred)
  • 6 cups Rice Krispies cereal
  • 1 cup shelled, unsalted pistachios, roughly chopped
  • 0.5 cup semi-sweet chocolate chips

Instructions

  • Grease a 13x9-inch baking pan. Set aside.
  • In a large saucepan over low heat, melt the butter. Add marshmallows and stir constantly until completely smooth. Remove from heat.
  • Stir in vanilla extract and green food coloring until the color is evenly distributed throughout the mixture.
  • Fold in the Rice Krispies cereal and chopped pistachios until fully coated with the marshmallow mixture.
  • Press mixture evenly and firmly into the prepared pan using a greased spatula or greased hands.
  • Melt chocolate chips in 30-second microwave intervals, stirring between each, until smooth. Drizzle over the treats.
  • Let chocolate set at room temperature (about 1 hour) or refrigerate for 20-30 minutes. Cut into 24 squares with a greased knife.
