Ingredients

  • 1 cup Greek yogurt (full-fat recommended)
  • 0.5 cup peanut butter (natural, creamy or chunky)
  • 0.25 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 0.25 cup mini chocolate chips (optional)
  • 0.25 cup chopped peanuts (optional)

Instructions

  • In a mixing bowl, whisk together the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract until completely smooth and well combined.
  • If using, gently fold in the mini chocolate chips and chopped peanuts until evenly distributed.
  • Line an 8x8-inch baking dish with parchment paper, leaving an overhang on two sides.
  • Pour the mixture into the prepared dish and spread it into an even layer with a spatula.
  • Freeze for at least 4 hours, until completely firm.
  • Use the parchment to lift the frozen block out. Place on a cutting board and slice into 9 bars. Serve immediately or store in an airtight container in the freezer.
