Equipment

  • Medium Mixing Bowl For combining ingredients.
  • 1-Tablespoon Scoop or Measuring Spoon For portioning even bites.

Ingredients

  • 0.5 cup quick oats
  • 0.25 cup peanut butter (creamy or crunchy)
  • 2 tbsp honey
  • 0.25 cup mini chocolate chips

Instructions

  • In a medium bowl, combine the quick oats and mini chocolate chips.
  • Add the peanut butter and honey to the bowl.
  • Stir with a sturdy spoon or spatula until the mixture is thick, sticky, and well combined.
  • Using a 1-tablespoon scoop, portion out the mixture and roll each portion between your palms into smooth balls. You should get about 12 bites.
  • For best texture, let the bites sit at room temperature for 30 minutes before serving. Store in an airtight container.

Notes

Pro Tips: The key to perfect texture is the consistency of your peanut butter. If using natural peanut butter, you may need to add an extra tablespoon of oats to help bind the mixture. Quick oats work much better than old-fashioned oats. Mini chocolate chips ensure chocolate in every bite. If your mixture is too dry, add a tiny splash of water or extra honey. If too wet, add more oats. Let the bites sit for 30 minutes after rolling for the best texture. They freeze beautifully for up to 3 months!
