Ingredients

  • 2 cups pancake mix (like Hungry Jack)
  • 1.5 cups water
  • 1 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • 0.25 cup maple syrup (plus extra for dipping)

Instructions

  • Preheat oven to 400°F (200°C). Grease a mini muffin pan generously.
  • In a skillet over medium-high heat, cook the breakfast sausage until fully browned, breaking it up with a spoon. Drain excess grease and set aside.
  • In a large bowl, prepare pancake batter by combining pancake mix and water according to package instructions. Stir just until combined; do not overmix.
  • Gently stir the cooked sausage, shredded cheddar cheese, and ¼ cup maple syrup into the batter until well combined.
  • Fill each mini muffin cup about three-quarters full with the batter. Bake for 12-15 minutes, until golden brown and a toothpick comes out clean.
  • Let cool slightly in the pan, then serve warm with additional maple syrup for dipping.
