Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley
  • 1 cup cauliflower rice

Instructions

  • Preheat your oven to 375°F (190°C) and grease a 9x9-inch baking dish.
  • In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  • Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the heavy cream, chicken broth, Parmesan cheese, lemon juice, salt, black pepper, and red pepper flakes (if using). Stir well and let it simmer for 3-4 minutes until slightly thickened.
  • Add the cauliflower rice to the skillet and stir to combine with the sauce. Cook for an additional 2 minutes.
  • Transfer the cauliflower rice mixture to the prepared baking dish. Arrange the cooked shrimp on top and sprinkle with shredded mozzarella cheese.
  • Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped fresh parsley before serving.
