Ingredients

  • 2 large boneless, skinless chicken breasts
  • 6 slices thick-cut bacon
  • 6 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup thinly sliced red onion
  • 1/2 cup ranch dressing (sugar-free for keto)
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the bacon slices in a single layer. Bake for 12-15 minutes or until crispy. Remove from the oven, transfer bacon to a paper towel-lined plate to drain excess grease, and set aside to cool. Once cooled, chop the bacon into bite-sized pieces.
  • While the bacon is cooking, season the chicken breasts with olive oil, garlic powder, paprika, salt, and black pepper. Heat a skillet over medium-high heat and cook the chicken for 5-6 minutes per side or until the internal temperature reaches 165°F (74°C). Remove from the skillet and let it rest for 5 minutes before slicing into thin strips.
  • In a large salad bowl, combine the chopped romaine lettuce, halved cherry tomatoes, shredded cheddar cheese, and thinly sliced red onion. Toss gently to mix the ingredients evenly.
