Ingredients

  • 2 medium sweet potatoes
  • 2 tbsp olive oil or avocado oil, divided
  • 30 g taco seasoning (homemade or 1 packet)
  • 500 g lean beef mince/ground beef
  • 2 cups dairy-free cottage cheese (or regular)
  • 1 large avocado, peeled and diced
  • 1 to 2 tbsp hot honey (adjust to taste)

Instructions

  • Wash sweet potatoes and cut into 2.5 cm (1-inch) cubes. In a bowl, toss with 1 tbsp oil and 1 tsp taco seasoning until coated.
  • Cook sweet potatoes: In an air fryer at 200°C (400°F) for 20 minutes, shaking occasionally. Or roast in a 220°C (425°F) oven for 25-30 minutes, flipping halfway.
  • While potatoes cook, heat remaining 1 tbsp oil in a large pan over medium heat. Add beef mince and cook, breaking apart, until browned.
  • Stir in remaining taco seasoning and a splash of water. Cook until beef is fully browned and liquid has evaporated.
  • Divide cooked sweet potatoes and beef between four bowls. Top with diced avocado and a scoop of cottage cheese. Drizzle with hot honey.
  • Mix everything together before serving to enjoy a bit of each flavour in every bite.
