Equipment

  • 8x8 inch Baking Pan For baking the blondies.
  • Mixing Bowl For mixing the batter.
  • Whisk and Spatula For mixing and spreading.

Ingredients

  • 1 large egg
  • 0.5 cup unsalted butter, melted
  • 0.25 cup honey
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 cup light brown sugar, packed
  • 0.5 tsp salt
  • 1 tsp ground cinnamon, divided
  • 3 tbsp granulated sugar (for topping)

Instructions

  • Preheat oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper.
  • In a mixing bowl, whisk together melted butter and brown sugar until smooth. Add egg, honey, and vanilla; whisk until combined.
  • Add flour, salt, and ½ teaspoon cinnamon to the bowl. Stir gently with a spatula until just combined. Do not overmix.
  • Pour batter into prepared pan and spread evenly. In a small bowl, mix granulated sugar and remaining ½ teaspoon cinnamon. Sprinkle evenly over the batter.
  • Bake for 22-25 minutes, until a toothpick inserted in the center comes out clean. Cool completely in the pan on a wire rack.
  • Once cool, lift from pan (if using parchment) and cut into 16 squares. Serve.

Notes

Pro Tips: Do not overbake – remove blondies when a toothpick comes out with a few moist crumbs. Do not overmix the batter to keep them tender. The cinnamon sugar topping is essential for that signature crackly crust. Let them cool completely before slicing for clean squares. These blondies are perfect for gifting and freeze beautifully for up to 3 months.
