Ingredients

  • 4.5 cups all-purpose flour (spooned & leveled), plus extra
  • 1.75 cups warm milk or water (110°F)
  • 2.25 tsp instant yeast (1 packet)
  • 1 tbsp granulated sugar
  • 1 tsp fine salt
  • 2 tbsp unsalted butter, melted
  • 9 cups water (for bath)
  • 0.5 cup baking soda (for bath)
  • 1 large egg, beaten with 1 tbsp water (for wash)
  • 2 tbsp coarse salt or pretzel salt
  • 0.5 cup mayonnaise
  • 2 tbsp yellow mustard
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 1 tbsp apple cider vinegar or lemon juice

Instructions

  • Mix dough ingredients in a stand mixer for 4-5 mins until smooth. Let rise in a warm place for 30-60 mins until doubled.
  • Punch down dough. Roll into ropes and cut into 1-1.5 inch pieces.
  • Boil water and baking soda. Boil dough bites for 30 seconds, then transfer to a parchment-lined baking sheet.
  • Brush bites with egg wash, sprinkle with coarse salt. Bake at 450°F for 12-14 mins until deep golden brown.
  • Whisk all honey mustard sauce ingredients until smooth. Serve warm pretzel bites with sauce for dipping.

Pro Tips: For the signature chewy crust, ensure your baking soda bath is at a rolling boil before adding the dough bites.
