Equipment

  • 9x13 inch Baking Pan
  • Heart-Shaped Cookie Cutter (2-3 inch) Essential for the shape.

Ingredients

  • 1 cup unsalted butter (2 sticks)
  • 8 oz semi-sweet or dark chocolate, coarsely chopped
  • 1.5 cups granulated sugar
  • 0.75 cup packed light brown sugar
  • 4 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 cup all-purpose flour
  • 0.5 cup unsweetened natural cocoa powder
  • 1 tsp salt
  • Powdered sugar, for dusting

Instructions

  • Preheat oven to 350°F (175°C). Line a 9x13" pan with parchment. Melt butter and chocolate together until smooth. Let cool for 5 minutes.
  • Whisk both sugars into the warm chocolate mixture. Add eggs one at a time, whisking vigorously after each until batter is thick and glossy. Whisk in vanilla.
  • Sift flour, cocoa powder, and salt into the bowl. Gently fold with a spatula until just combined and no dry streaks remain.
  • Spread batter into prepared pan. Bake 30-35 mins, until a toothpick has a few moist crumbs. Cool completely in pan, then chill for 2+ hours.
  • Lift chilled brownie slab from pan. Use a heart-shaped cutter to stamp out brownies. Dust tops generously with powdered sugar.

Notes

Pro Tips: For perfectly clean heart shapes, it is essential to chill the baked and cooled brownies completely before cutting—2 hours in the fridge or overnight is best. Vigorously whisking the eggs into the warm chocolate and sugar mixture is the secret to achieving that classic, shiny brownie top. Dip your heart-shaped cookie cutter in powdered sugar between cuts to prevent sticking.
