Equipment

  • Large Skillet For caramelizing onions and cooking beef.
  • Spatula or Wooden Spoon For breaking up the beef.
  • Sharp Knife For slicing onions thinly.

Ingredients

  • 1 lb ground beef (85% lean)
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce (low sodium)
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • Salt and freshly ground black pepper, to taste
  • 4 hamburger buns (brioche or potato rolls recommended)
  • 1 cup shredded Swiss cheese
  • 1 tbsp butter (for toasting buns)
  • Fresh parsley or thyme, chopped (optional for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add sliced onions in an even layer. Cook for 10-12 minutes, stirring occasionally, until deeply golden and caramelized. If browning too quickly, reduce heat and add a splash of water.
  • Push onions to the sides. Add minced garlic to the center and cook for 1-2 minutes until fragrant. Increase heat to medium-high, add ground beef, and cook until fully browned, breaking it up with a spatula, about 5-7 minutes.
  • Drain excess fat if needed. Stir caramelized onions back into the beef. Add Worcestershire sauce, soy sauce, thyme, salt, and pepper. Simmer for 5 minutes until flavors meld.
  • While beef simmers, split buns and spread cut sides with butter. Toast in a skillet butter-side down until golden and crisp, about 2 minutes.
  • Spoon generous portions of the beef mixture onto the bottom buns. Top with shredded Swiss cheese and cap with the top buns. Garnish with fresh herbs if desired. Serve immediately.

Notes

Pro Tips: The #1 rule for this recipe is to be patient with the onions – true caramelization takes 10-12 minutes and is essential for that sweet, complex flavor. Use 85% lean ground beef for the best balance of flavor and fat. Toast your buns thoroughly to prevent sogginess. For an even deeper French onion flavor, add ½ cup beef broth to the onions and let it reduce before adding the beef. This mixture is perfect for making ahead and freezes beautifully.
