Ingredients

  • 1 box (15.25 oz) white or yellow cake mix
  • 2 large eggs
  • 0.33 cup vegetable oil
  • 0.25 tsp Kelly green gel food coloring
  • 3 tbsp granulated sugar
  • 6 tbsp powdered sugar (confectioners' sugar)

Instructions

  • In a large bowl, stir the cake mix, eggs, and oil together until a thick, sticky dough forms and no dry mix remains.
  • Add the green gel food coloring. Stir and fold until the color is completely uniform throughout the dough.
  • Let the dough rest, covered, for 15-30 minutes at room temperature (this makes it less sticky). Preheat oven to 350°F (175°C) and line baking sheets.
  • Place granulated sugar in one bowl and powdered sugar in another. Scoop dough with a 1-tbsp scoop, roll into a ball, roll in granulated sugar, then heavily in powdered sugar.
  • Place dough balls 2 inches apart on baking sheets. Bake for 9-12 minutes until puffed, crackled on top, and edges are set (centers will look soft).
  • Let cookies cool on the baking sheet for 5 minutes to set, then transfer to a wire rack to cool completely.

Pro Tips: For the best crackle effect, heavily coat each dough ball in powdered sugar before baking. Use gel food coloring for the most vibrant green color without thinning the dough. For soft, chewy cookies, do not overbake—remove them when the edges are set but centers still look soft. The dough can be sticky; letting it rest for 15-30 minutes or lightly greasing your hands makes rolling easier.
