Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 1 oz packet dry ranch seasoning mix
  • 1 10.5 oz can condensed cream of chicken soup
  • 0.5 cup chicken broth
  • 0.5 cup sour cream (or cream cheese)
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil (optional, for searing)
  • 1 cup shredded cheddar cheese (optional, for garnish)

Instructions

  • Pat chicken dry. Heat oil in a skillet over medium-high. Sear chicken for 2-3 mins per side until golden. This adds great flavor.
  • In slow cooker, whisk together soup, ranch seasoning, broth, garlic powder, onion powder, and pepper until smooth.
  • Add chicken to sauce, turning to coat. Cover and cook on LOW for 6-7 hrs or HIGH for 3-4 hrs, until chicken shreds easily.
  • Remove chicken, shred with two forks, and return to pot. Stir in sour cream until creamy and heated through.
  • Garnish with cheese if desired. Serve hot over rice, pasta, or mashed potatoes.
