- 4 boneless, skinless chicken breasts (or thighs)
- 1 1 oz packet dry ranch seasoning mix
- 1 10.5 oz can condensed cream of chicken soup
- 0.5 cup chicken broth
- 0.5 cup sour cream (or cream cheese)
- 0.5 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil (optional, for searing)
- 1 cup shredded cheddar cheese (optional, for garnish)
Pat chicken dry. Heat oil in a skillet over medium-high. Sear chicken for 2-3 mins per side until golden. This adds great flavor.
In slow cooker, whisk together soup, ranch seasoning, broth, garlic powder, onion powder, and pepper until smooth.
Add chicken to sauce, turning to coat. Cover and cook on LOW for 6-7 hrs or HIGH for 3-4 hrs, until chicken shreds easily.
Remove chicken, shred with two forks, and return to pot. Stir in sour cream until creamy and heated through.
Garnish with cheese if desired. Serve hot over rice, pasta, or mashed potatoes.
Pro Tips: For the best flavor, take 5 minutes to sear the chicken breasts in a hot skillet before adding them to the slow cooker. To make it a complete meal, add 2 cups of frozen mixed vegetables during the last hour of cooking.
