- 1.5 pounds boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons olive oil
- 1 cup heavy cream
- 0.5 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 0.5 cup parmesan cheese, freshly grated
- 1 cup fresh spinach, chopped
- 0.5 cup sun-dried tomatoes, drained and julienned
Pat chicken dry and season with salt. In a large skillet, heat olive oil over medium-high heat. Cook chicken for 3-5 minutes per side until golden and cooked through (165°F). Remove to a plate.
In the same skillet, reduce heat to medium. Add heavy cream, chicken broth, garlic powder, and Italian seasoning. Whisk for 1-2 minutes, scraping up browned bits.
Sprinkle in the grated parmesan cheese. Whisk continuously for 3-4 minutes until the cheese is melted and the sauce has thickened.
Add the chopped spinach and sun-dried tomatoes. Stir and simmer for 1-2 minutes until spinach wilts. Return chicken to the skillet, spoon sauce over it, and heat through. Serve immediately.
Pro Tips: For the smoothest, creamiest sauce, always use freshly grated parmesan cheese from a block. Pre-shredded cheese contains additives that can make sauces grainy.
