Equipment

  • Large Oven-Safe Skillet (12-inch) For searing and baking.
  • Instant-Read Thermometer Essential for perfect doneness.
  • Tongs For flipping chicken and bacon.

Ingredients

  • 4 boneless skinless chicken breasts
  • 8 strips thick-cut bacon
  • 1 cup sharp cheddar cheese, shredded
  • 0.75 cup BBQ sauce
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • Salt and black pepper, to taste
  • 0.5 cup Monterey Jack cheese (optional)
  • 2 green onions, sliced (for garnish)
  • Fresh cilantro, chopped (optional)
  • Ranch dressing (optional)

Instructions

  • Pat chicken dry. Season with smoked paprika, garlic powder, onion powder, salt, and pepper. Cook bacon in a skillet until 75% done; set aside.
  • Heat oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove from heat.
  • Mix BBQ sauce with brown sugar. Brush over each chicken breast. Top each with 2 strips of partially cooked bacon, crisscrossing.
  • Preheat oven to 375°F. Sprinkle cheddar cheese over chicken. Bake for 20-25 minutes, until chicken reaches 165°F internal temperature.
  • Let chicken rest for 5 minutes. Garnish with green onions, cilantro, or a drizzle of ranch if desired. Serve hot.

Notes

Pro Tips: Pre-cook bacon to 75% done before layering on chicken for perfect crispiness. Don't skip the sear – it creates a flavorful crust. Use an instant-read thermometer to cook chicken to exactly 165°F for juicy results every time. Let the chicken rest for 5 minutes before serving. This dish is endlessly customizable – try pepper jack cheese for heat or add pineapple for a Hawaiian twist.
