Equipment

Ingredients

  • 10 oz frozen chopped spinach, thawed and squeezed VERY dry
  • 4 oz cream cheese, softened
  • 0.5 cup mayonnaise
  • 0.5 cup sour cream
  • 0.25 cup Knorr Vegetable Recipe Mix (half packet)
  • 0.5 cup bacon pieces (or 6 slices cooked and crumbled)
  • 4 oz water chestnuts, drained and finely chopped
  • 4 spinach flour tortillas

Instructions

  • Finely chop the drained water chestnuts so there are no large chunks.
  • In a large bowl, combine the squeezed-dry spinach, softened cream cheese, mayonnaise, sour cream, and Knorr Vegetable Recipe Mix. Mix until completely smooth.
  • Fold in the chopped water chestnuts and bacon pieces until evenly distributed.
  • Spread one-quarter of the filling evenly over each spinach tortilla. Roll up tightly from one end.
  • Wrap each rolled tortilla tightly in plastic wrap. Refrigerate for at least 1 hour, or up to 24 hours.
  • Unwrap rolls. Trim off ends, then slice each roll into 6 even pieces (about 1 inch thick). Arrange on a platter and serve.

Chill the rolled tortillas for at least 1 hour (overnight is even better) before slicing; this firms up the filling for clean, beautiful cuts.
