Equipment

  • Waffle Iron Essential for this recipe.
  • Mixing Bowls For batter and drizzle.
  • Piping Bag or Zip-Top Bag For creating the cinnamon swirl.

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1.5 cups buttermilk
  • 2 large eggs
  • 0.25 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 0.25 cup unsalted butter, melted (for swirl)
  • 0.33 cup packed light brown sugar
  • 1 tbsp ground cinnamon
  • 4 oz cream cheese, softened
  • 0.75 cup powdered sugar
  • 2 tbsp milk
  • 0.5 tsp vanilla extract (for drizzle)

Instructions

  • Preheat your waffle iron according to the manufacturer's instructions.
  • In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt. In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla. Pour wet into dry and stir gently just until combined. Do not overmix.
  • In a small bowl, mix melted butter, brown sugar, and cinnamon until a smooth paste forms. Transfer to a piping bag or zip-top bag with a tiny corner snipped off.
  • In a medium bowl, beat softened cream cheese until smooth. Add powdered sugar, milk, and vanilla, mixing until you have a smooth, pourable drizzle. Set aside.
  • Lightly grease the hot waffle iron. Pour about ½ cup batter onto the center. Immediately pipe a spiral of the cinnamon mixture over the batter. Close and cook for 3-4 minutes until golden and crisp. Repeat with remaining batter and swirl.
  • Serve waffles warm, generously drizzled with the cream cheese topping.

Notes

Pro Tips: For the prettiest swirl, use a piping bag or zip-top bag with a snipped corner to pipe the cinnamon mixture onto the batter. Don't overmix the waffle batter – a few lumps are fine and keep the waffles tender. Ensure your cream cheese is fully softened for a silky-smooth drizzle. For the crispiest waffles, make sure your waffle iron is fully preheated before adding the batter. These waffles freeze beautifully – make a double batch!
