Ingredients

  • 2 cups cooked pasta (rotini or penne)
  • 2 cups cooked chicken breast, diced or shredded
  • 2 cups romaine lettuce, chopped
  • 0.5 cup cherry tomatoes, halved (optional)
  • 0.33 cup grated Parmesan cheese
  • 0.5 cup Caesar dressing
  • 0.5 cup croutons, roughly crushed
  • Salt and pepper, to taste
  • Fresh parsley or basil, for garnish (optional)

Instructions

  • Cook pasta according to package directions until al dente. Drain, rinse under cold water to cool, and drain well.
  • In a large bowl, combine cooled pasta, diced chicken, chopped romaine, and cherry tomatoes. Toss gently.
  • Pour Caesar dressing over the mixture and toss until evenly coated.
  • Stir in grated Parmesan cheese. Season with salt and pepper to taste.
  • Just before serving, sprinkle crushed croutons on top. Garnish with fresh parsley if desired. Serve immediately.
