Ingredients

  • 2 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 avocado, sliced
  • 4 slices your favorite cheese (Swiss, cheddar, provolone)
  • 4 slices bread (sourdough or ciabatta recommended)
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil, for grilling

Instructions

  • Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side, until cooked through (165°F internal). Let rest for 5 minutes, then slice thinly.
  • While chicken cooks, slice avocado, onion, and tomato.
  • Spread mayonnaise and Dijon mustard on one side of each bread slice. On two slices, layer chicken, avocado, cheese, onion, and tomato. Top with remaining bread slices.
  • Heat a clean skillet over medium heat. Add butter or oil. Place sandwiches in the pan and cook for 3-4 minutes per side, pressing gently, until golden brown and cheese is melted.
  • Remove from skillet, let rest for a minute, slice in half, and serve warm.
