Equipment

Ingredients

  • 1 lb pasta (rotini, elbow macaroni, or shells)
  • 8 slices bacon, cooked crispy and chopped
  • 1.5 cups sharp cheddar cheese, freshly grated
  • 0.5 cup sour cream
  • 0.5 cup liquid ranch dressing
  • 0.5 cup green onions, sliced
  • Salt and pepper, to taste

Instructions

  • Cook pasta in salted water according to package directions until al dente. Drain and set aside to cool in a large bowl.
  • Cook bacon until crispy (oven method: 400°F for 20-25 minutes). Cool and chop into bite-sized pieces.
  • In a small bowl, whisk together sour cream and ranch dressing until smooth.
  • Once pasta is just warm, add green onions, cheddar cheese, and half the bacon. Stir gently to combine.
  • Pour dressing over the pasta mixture and toss until evenly coated.
  • Refrigerate for at least 30 minutes to allow flavors to meld. Before serving, sprinkle remaining bacon on top. Serve cold.
