Instructions

  • Prep the Corn: Preheat your oven to 425°F (220°C) or air fryer to 400°F (200°C). Using a sharp knife, carefully cut each ear of corn in half lengthwise, then cut each half into 3-4 lengthwise strips (ribs). Try to keep the kernels intact for the best presentation.
  • Season the Corn: In a large bowl, toss the corn ribs with olive oil, smoked paprika, garlic powder, salt, black pepper, and cayenne (if using). Ensure the ribs are evenly coated with the seasoning.
  • Cook the Corn Ribs: Oven Method: Arrange the corn ribs on a parchment-lined baking sheet, cut-side down. Roast for 18-20 minutes, flipping halfway, until golden and slightly charred. Air Fryer Method: Place the corn ribs in the air fryer basket in a single layer, cut-side down. Cook for 10-12 minutes, flipping halfway, until crispy and golden. Work in batches if needed.
  • Make the Elote Sauce: While the corn is cooking, mix the mayonnaise, sour cream, lime zest, and lime juice in a small bowl until smooth. Set aside.
  • Assemble the Corn Ribs: Once the corn ribs are done, transfer them to a serving platter. Drizzle the elote sauce evenly over the ribs, then sprinkle with crumbled feta cheese, chopped cilantro, and a dusting of chili powder.
